I found myself staring at a bag of russet potatoes last Tuesday, wondering how to turn them into something better than plain mashed spuds. The answer came in the form of crispy edges and gooey centers, a texture combo that has firmly secured this dish’s place on my dinner table rotation.

Ingredients
  

Potatoes
  • 4 large russet potatoes about 2 lbs total, scrubbed clean
Seasoning & Oil
  • 2 tbsp olive oil
  • Kosher salt and freshly cracked black pepper to taste
Toppings
  • 1 cup sharp cheddar cheese shredded
  • 6 slices bacon cooked until crisp and crumbled
  • 3 tbsp sour cream
  • 2 tbsp fresh chives finely chopped

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Rub the potatoes all over with olive oil and season generously with salt and pepper. Place them directly on the prepared baking sheet.
  3. Bake for 45–50 minutes, turning halfway through, until the potatoes are tender when pierced with a fork and the skins are crisp. Remove from oven and let cool for at least 10 minutes. This resting period makes handling safer and easier.
  4. Once cool enough to handle, cut each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh, leaving about 1/8-inch layer attached to the skin to maintain structure. Reserve the scooped-out potato flesh for another use (like mashed potatoes).
  5. Brush the inside of the potato skins lightly with a little more olive oil if desired, or just rely on residual oil from step 3. Season the insides with a pinch of salt.
  6. Return the hollowed potato halves to the baking sheet. Bake for an additional 10–15 minutes until the edges are golden brown and crisp.
  7. Remove from oven and immediately top each skin with shredded cheddar cheese. Return to the oven for 2–3 minutes, just until the cheese is melted and bubbly. Watch closely so it doesn’t burn.
  8. Transfer to a serving platter. Top each skin with crumbled bacon, a dollop of sour cream, and a sprinkle of fresh chives. Serve immediately while hot and crispy.
