Pork cordon bleu with fries — Fresh homemade recipe photo

Pork cordon bleu with fries

No ratings yet
When my daughter was little, she used to refuse everything until I started putting ham inside the chicken. Then came the cheese. Then I got impatient with breading in separate bowls and started doing it all at once — a messier method that actually works better because you see the flour stick where it needs to.
What makes this dish worth the effort is that the buttery, crumbly exterior gives way to hot, melted cheese without fighting too hard for it. I keep mine on rotation because the chicken cooks fast and there's only one pan if you're feeling lazy (though two pans give better results). The secret is letting the rolled cutlets rest after breading — just five minutes so the flour settles before hitting oil.
I serve this with anything from mashed potatoes to roasted vegetables, but fries are the classic pairing. A squeeze of lemon over everything cuts through the richness without overpowering it.

Ingredients

For the chicken:
  • 4 boneless skinless chicken breasts (about 6 oz each), pounded thin
  • 8 slices deli ham
  • 8 slices Swiss cheese
  • Salt and freshly ground black pepper
For the breading station:
  • 1 cup all-purpose flour
  • 2 large eggs beaten with a pinch of salt
  • 2 cups panko breadcrumbs
For cooking:
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • Lemon wedges for serving optional

Method

  1. Prep the chicken. Place each breast between two sheets of plastic wrap and pound to about ¼-inch thickness. Season lightly with salt and pepper on both sides.
  2. Assemble your breading station. Set up three shallow dishes: flour in one, beaten eggs in the second, panko in the third. Keep them close together so you can work quickly.
  3. Bread each cutlet. Lay a piece of chicken flat. Top with two slices of ham folded slightly to fit, then two slices of cheese. Roll tightly from the long end and secure with toothpicks at both ends. Roll first in flour (shake off excess), then egg (let excess drip), then press firmly into panko until well-coated. Set aside for 5 minutes before cooking.
  4. Heat your pan. In a large skillet, heat butter and oil over medium-high heat until the butter foams but doesn't brown.
  5. Cook the chicken. Add cutlets in batches (don't crowd — two at most). Cook 3-4 minutes per side until golden brown and crispy. The internal temperature should reach 165°F when you remove them from the pan.
  6. Rest and serve. Transfer to a paper towel-lined plate for 2 minutes, then remove toothpicks before serving with lemon wedges if desired.
