Poppy seed cake with vanilla buttercream icing

No ratings yet
I discovered this poppy seed cake during a particularly stressful summer when I needed something sweet but didn’t have the energy for elaborate frosting. It’s become my go-to because it’s moist without being heavy, and the vanilla buttercream adds just enough richness to keep you coming back for another slice.

Ingredients

For the Poppy Seed Cake:
  • 1 cup unsalted butter softened to room temperature
  • 1 ½ cups granulated sugar
  • 4 large eggs at room temperature
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tbsp poppy seeds
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk
For the Vanilla Buttercream Icing:
  • 1 cup unsalted butter softened to room temperature
  • 3-4 cups powdered sugar sifted
  • 2 tsp vanilla extract
  • 1-2 tbsp heavy cream or milk
  • Pinch salt

Method

  1. Prep the Pan and Oven:
    1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter, then dust them with flour, tapping out any excess. Line the bottoms with parchment paper for easy removal.
  2. Mix Dry Ingredients:
    2. In a medium bowl, whisk together the flour, poppy seeds, baking powder, and salt until well combined. Set aside.
  3. Cream Butter and Sugar:
    3. In a large mixing bowl, beat the softened butter and granulated sugar on medium-high speed for about 3-4 minutes, until the mixture is light, fluffy, and pale in color. This step is crucial for incorporating air into the cake.
  4. Add Eggs and Vanilla:
    4. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl with a spatula to ensure even mixing. Stir in the vanilla extract.
  5. Combine Wet and Dry Ingredients:
    5. Reduce the mixer speed to low. Alternately add the dry ingredients and the milk to the butter mixture, beginning and ending with the flour mixture. Mix just until combined; do not overmix. Let the batter rest for 10 minutes before pouring into the pans.
  6. Bake:
    6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The cakes should spring back lightly when touched.
  7. Cool:
    7. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely before frosting. This is important to prevent the buttercream from melting.
  8. Make the Buttercream:
    8. In a clean bowl, beat the softened butter on medium speed until creamy. Gradually add the sifted powdered sugar, one cup at a time, alternating with heavy cream or milk as needed to reach your desired consistency. Add vanilla and salt, then increase speed to high and whip for 2-3 minutes until light and fluffy.
  9. Assemble:
    9. Place one cake layer on your serving plate. Spread a generous layer of buttercream over the top. Place the second layer on top and frost the top and sides of the cake with the remaining icing. Decorate as desired.

Notes

The secret isn’t in the technique—it’s in letting the batter rest for ten minutes before baking. This simple pause allows the poppy seeds to hydrate, ensuring they’re plump and distributed evenly throughout the crumb rather than sinking to the bottom. It’s a small step that makes a noticeable difference in texture.
I usually serve this with a cup of black coffee or tea on quiet weeknights. It pairs beautifully with fruit, too; fresh berries cut through the sweetness perfectly. You can make the cake ahead of time and store it in the fridge for up to three days, which is perfect for busy mornings.
