I first served this plum pudding cake at a potluck when I was still trying to prove I could handle dessert without ordering takeout. A neighbor took one bite and immediately asked for the recipe — not because it looked impressive, but because the flavor hit exactly right: tart plums folded into something that tasted like buttered toast with jam. Since then it's earned a permanent spot in my rotation.
The cake rises into a craggy crown during baking and settles slightly when cooled, which is part of its charm. You'll know it's done when the top feels firm but not dry to the touch — that gives you a generous window so you don't overbake it into rubbery territory. I add the plums before they're fully soft, letting them cook inside the batter where their juices create pockets of concentrated fruit flavor.

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 6 tbsp unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup whole milk
Topping
  • 8 oz plums about 5–6 medium, halved and pitted
  • 2 tbsp sugar for sprinkling on top

Method
 

  1. Preheat your oven to 350°F. Butter a 9-inch springform pan or round cake pan, then line the bottom with parchment paper.
  2. In a small bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar with an electric mixer on medium-high speed for about 4 minutes, until light and fluffy. The mixture should look pale yellow and slightly increased in volume.
  4. Beat in eggs one at a time, mixing well after each addition. Add vanilla and mix briefly to combine.
  5. Reduce mixer speed to low and gradually add the flour mixture, alternating with milk — begin and end with flour. Mix until just combined; do not overmix. The batter will be thick but pourable.
  6. Arrange plum halves cut-side up on top of the batter in a single layer (you can press them down slightly). Sprinkle 2 tbsp sugar evenly over the plums and cake surface.
  7. Bake for 35–40 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean or with just moist crumbs. If the top browns too quickly, tent loosely with foil halfway through baking.
  8. Cool in the pan on a wire rack for 10 minutes before removing the ring. Serve warm or at room temperature.
