I used to think pesto was just a vibrant green garnish until I realized it makes the most effortless weeknight sauce if you whisk it with cream. This dish entered my permanent rotation last Tuesday when I needed dinner in twenty minutes and had half a jar of basil pesto gathering dust in the fridge.

  • 12 oz short pasta shapes rotini, fusilli, or orecchiette work best (340g)
  • Kosher salt for boiling water
  • 2 tablespoons extra-virgin olive oil divided
The Sauce
  • ½ cup heavy cream 120ml
  • ¼ cup fresh basil pesto store-bought or homemade
  • ⅓ cup finely grated Parmesan cheese plus more for serving
  • 1 tablespoon reserved pasta cooking water
  • ½ teaspoon freshly cracked black pepper
Optional Add-ins
  • 1 cup cherry tomatoes halved
  • 4 oz cooked chicken or shrimp sliced optional

Method
 

  1. Boil the Pasta: Bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook according to package directions until al dente. Before draining, carefully scoop out 1 tablespoon of the starchy cooking water and set it aside. Reserve the rest for later if needed.
  2. Sauté Aromatics (Optional): While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. If using tomatoes or proteins, add them now and cook until warmed through or just tender, about 3-5 minutes. Remove from the pan if you are pre-cooking protein to avoid overcooking it later.
  3. Create the Base: Reduce the heat to low. In a small bowl, whisk together the heavy cream, pesto, Parmesan cheese, and the reserved 1 tablespoon of pasta water until smooth. This step ensures the cheese melts evenly without clumping.
  4. Combine: Add the drained hot pasta directly into the skillet with any remaining oil or vegetables. Pour the cream-pesto mixture over the pasta. Toss vigorously for 1–2 minutes, allowing the sauce to heat through and thicken slightly. If the sauce looks too thick, add another splash of reserved pasta water.
  5. Finish and Serve: Remove from heat. Taste and adjust seasoning with black pepper or a pinch of salt if needed (remember the cheese is salty). Serve immediately, topped with extra Parmesan and fresh basil leaves if desired.
