I’d been struggling with bland white fish until I realized cod needed more than just lemon; it needs earthy depth. This dish pairs tender, spiced cod with sweet, crisp papaya, creating a texture contrast that keeps every bite interesting without requiring fancy techniques or hard-to-find ingredients.

Ingredients
  

For the Cod Masala Salad
  • 2 cod fillets 6 oz each, skin removed and patted dry
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp turmeric powder
  • 1/2 tsp sea salt divided
  • 1 tbsp olive oil or avocado oil
For the Papeta Pur (Papaya Base)
  • 1 cup ripe but firm papaya cut into small cubes
  • 1/2 red onion finely diced
  • 1/4 cup fresh cilantro leaves chopped
  • 1 lime juiced (approx. 1-2 tbsp)
  • 1/2 tsp honey or maple syrup optional, depending on papaya sweetness

Method
 

  1. Prepare the Papeta Pur: In a small bowl, combine the cubed papaya, diced red onion, and chopped cilantro. Squeeze the lime juice over the mixture and toss gently to coat. If your papaya is very sweet, add the honey or maple syrup. Set aside for at least 5 minutes to allow flavors to meld and juices to release.
  2. Make the Masala Rub: In a small dish, mix together the ground coriander, cumin, smoked paprika, turmeric, and 1/4 teaspoon of sea salt. Ensure there are no large clumps of spice.
  3. Season the Cod: Pat the cod fillets completely dry with paper towels. Rub both sides of the fish with half the remaining salt (1/4 tsp) to draw out excess moisture. Then, generously coat all surfaces of the fillets with the masala rub, pressing gently so it adheres.
  4. Sear the Cod: Heat the olive oil in a non-stick skillet over medium-high heat until shimmering but not smoking. Place the cod fillets skin-side down (or presentation side down). Cook undisturbed for 3-4 minutes until golden brown and the fish releases easily from the pan.
  5. Finish Cooking: Flip the fillets carefully using a thin spatula. Add a splash of water to the pan and cover immediately with a lid. Steam-cook for another 2-3 minutes. The internal temperature should reach 145°F (63°C), or until the flesh is opaque and flakes easily with a fork.
  6. Assemble: Plate the papeta pur in the center of shallow bowls. Gently flake the cod into large chunks over the top, allowing some masala crust to remain intact for texture. Serve immediately while warm.
