- Preheat oven to 450°F with a rack in the lower third position. Place six 6-inch cast iron skillets or ramekins into the oven while it preheats — they should be hot when you add batter.
- In a blender, combine milk, eggs, flour, sugar, vanilla, and salt. Blend on medium speed for 30 seconds until smooth with no lumps. Let rest for 5 minutes (this helps the flour hydrate).
- Carefully remove one pan at a time from the oven using tongs or an oven mitt. Add 1 tablespoon butter to each hot pan — it should sizzle and melt immediately, bubbling up the sides.
- Pour about 1/2 cup batter into each prepared pan. Don't worry if some puddles form in the center — that's how they puff later.
- Return all pans to the oven and bake for 18-20 minutes until edges are deeply golden brown and centers have risen up like little crowns. The tops should be puffed and set, not wobbly.
- Remove from oven and let rest in the pan for 30 seconds before serving. They will deflate slightly — this is normal and beautiful.
