Marzipan doesn't behave like most baking ingredients. It's dense enough to feel heavy in your hand but soft enough to press into any shape without cracking. When I first started making these cakes, my marzipan kept falling apart—turns out the trick is letting it warm up slightly while you work with it rather than fighting against cold, stiff paste straight from the package.

Ingredients
  

For the cakes
  • 1 cup 200g almond flour
  • ½ cup 65g powdered sugar
  • ¼ teaspoon salt
  • 4 tablespoons 57g unsalted butter, softened
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • ¾ cup 225g marzipan, cut into pieces
For finishing
  • ½ cup apricot preserves
  • 2 tablespoons water
  • Extra powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a food processor, pulse the almond flour, powdered sugar, salt, butter, egg yolks, vanilla, and marzipan together until the mixture comes together into a thick paste that pulls away from the sides of the bowl. This usually takes about 30 seconds once everything is incorporated.
  3. Scoop out tablespoon-sized portions and roll them into balls with your hands (if the dough feels sticky, lightly wet your palms). Place the balls on the prepared baking sheet, spacing them about two inches apart so they have room to spread slightly.
  4. Brush each cake generously with warm apricot jam. To warm it quickly, microwave the preserves for 15 seconds until liquid and pourable—this makes brushing much easier than working with cold, thick preserves.
  5. Bake for 12-15 minutes until the edges are just beginning to turn golden. The cakes should feel firm when you gently press them but still yield slightly under pressure.
  6. Let cool on the baking sheet for five minutes before transferring to a wire rack. Once completely cooled, dust lightly with powdered sugar using a fine-mesh sieve.
