- Infuse the Oil: In a medium saucepan over medium-low heat, combine the olive oil, sliced garlic, red pepper flakes, and dried marjoram. Let this gently sizzle for about 2 to 3 minutes. You want to smell that beautiful, nutty garlic aroma, but be careful not to burn it—the garlic should turn a very light golden color, never brown.
- Add the Aromatics: Add the minced shallot to the pan. Cook for another 3-4 minutes, stirring frequently, until the shallot is soft and translucent. This creates the sweet foundation for the sauce.
- Bring in the Stars: Toss in your chopped green olives and capers. Stir them around to coat them in the garlicky oil and let them warm up for 1 minute. Then, stir in the lemon zest and the fresh lemon juice. The acid will brighten up all those rich flavors immediately.
- Cream It Up: Pour in the heavy cream (or coconut cream). Increase the heat to medium and bring the sauce just to a gentle simmer. Let it bubble lightly for 4-5 minutes, stirring occasionally, until the sauce thickens slightly and coats the back of a spoon.
- Season & Serve: Taste the sauce! This is crucial because olives and capers can be salty, so you might not need extra salt. Add black pepper to taste. Remove from heat and stir in half of your fresh parsley or basil. Drizzle with a little olive oil on top just before serving.
