Method
- Prep the oven and pan: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat. This ensures even browning and easy cleanup.
- Combine dry ingredients: In a large mixing bowl, whisk together the wholemeal flour, baking powder, salt, and sugar until uniformly combined. Whisking aerates the flour, which helps the scones rise properly.
- Cut in the butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter, two forks, or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. These visible chunks of butter are crucial for creating steam and flaky layers during baking.
- Mix wet ingredients: In a separate small bowl or jug, whisk together the cold buttermilk, beaten egg, vanilla extract, and maple syrup. Whisk until the maple syrup is fully incorporated into the liquid.
- Combine wet and dry: Pour the wet mixture over the flour-butter mixture. Using a spatula or your hands, gently fold the dough together just until it comes together into a shaggy mass. Do not overmix; the dough should look slightly lumpy and messy. Overworking the gluten will make tough scones.
- Fold in walnuts: Gently press the chopped walnuts into the dough with your hands to distribute them evenly without crushing them too much.
- Shape the dough: Turn the dough out onto a lightly floured surface. Pat or gently knead it 3-4 times until it forms a cohesive disc about 1 inch (2.5 cm) thick. Cut into 8 equal wedges using a sharp knife or bench scraper. Handle the dough as little as possible at this stage to maintain tenderness.
- Arrange and brush: Place the scones on the prepared baking sheet, leaving about 1-2 inches of space between them for expansion. Brush the tops lightly with a little extra maple syrup for a glossy finish (optional).
- Bake: Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown on top and sound hollow when tapped gently on the bottom. The internal temperature should reach at least 190°F (88°C) if you have a thermometer.
- Cool: Let the scones cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm or store for later.

Notes
The secret lies in keeping the butter cold until the very last second; it creates those flaky layers that crackle when you bite down. I serve them warm with salted butter on weekends or slice them for sandwiches during busy mornings because they hold their structure perfectly without drying out.
