Ingredients
Method
- Prep the asparagus: Snap off the woody ends (they'll naturally break where they should). Cut the stalks into 2-inch pieces, reserving a few pretty tips to save for garnish.
- Sauté the aromatics: Melt butter in a large pot over medium-low heat. Add diced onion and cook gently for about 5 minutes until translucent but not browned — this is crucial; you want sweetness, not caramelization. Add garlic and cook another minute until fragrant.
- Cook the asparagus: Add all the chopped asparagus pieces to the pot along with the vegetable broth. Bring to a gentle simmer and cook for 8-10 minutes until the asparagus is very tender when pierced with a fork.
- Blend until smooth: Carefully transfer the hot soup to a blender in batches (use caution — blend on low first, then increase speed). Alternatively, use an immersion blender directly in the pot. Blend until completely smooth and no large chunks remain.
- Add cream and lemon: Return soup to the pot if using a blender. Stir in heavy cream and bring to a gentle simmer (do not boil vigorously after adding cream). Remove from heat and stir in lemon juice. Season with salt and pepper, starting with 1/2 teaspoon each and adjusting to taste.
- Serve: Ladle into bowls, garnish with reserved asparagus tips and a final drizzle of olive oil. Serve immediately with crusty bread on the side.

Notes
What really changed this recipe for me was finishing it with a drizzle of good olive oil right before serving — not stirred in, but layered on top so each spoonful gets a different flavor experience. It's small enough to forget, significant enough to notice.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The soup thickens slightly when chilled — thin it with a splash of broth or cream when reheating on the stovetop over medium heat, stirring frequently until warmed through. Do not microwave, as it can separate.
For a lighter version, substitute half-and-half or whole milk for the heavy cream. If you have leftover asparagus tips from another recipe, use them here — no need to buy extra. You can also add 1/2 cup of cooked potatoes for a heartier texture without changing the flavor profile.
