I once over-baked a loaf so badly the edges went from caramel to charcoal in about twenty minutes. I learned my lesson: banana bread has less room for error than most people give it credit for.
This version is simple — just sugar, butter, eggs, and two very ripe bananas mashed into the batter. The secret I keep coming back to is leaving the pan uncovered while it cools; that prevents the dreaded soggy bottom every time. It's the kind of bread that disappears whether you serve it for breakfast with coffee or pull a slice out at three o'clock when something sweet feels necessary.
I usually make one loaf and freeze half, sliced. When I want to toast a piece later, I just pop it straight from frozen into a hot pan — no thawing required.

  • 3 ripe bananas about 1½ cups mashed, at room temperature
Butter
  • cup unsalted butter melted and slightly cooled
Sugar
  • ¾ cup granulated sugar
Eggs
  • 2 large eggs at room temperature
Vanilla
  • 1 teaspoon vanilla extract
Flour and Leavening
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Method
 

  1. Preheat oven to 350°F. Lightly grease an 8x4-inch loaf pan and line the bottom with parchment paper for easy removal.
  2. Mash the bananas in a large bowl until mostly smooth, leaving a few small lumps for texture. Whisk in the melted butter until fully combined.
  3. Stir in the sugar until the mixture looks glossy. Beat in the eggs one at a time, then whisk in the vanilla.
  4. Sprinkle the flour, baking soda, and salt over the wet ingredients. Fold gently with a spatula until just combined — stop as soon as you no longer see streaks of flour. Overmixing is what makes bread dense instead of tender.
  5. Pour batter into the prepared pan and smooth the top. Bake for 45–50 minutes, rotating the pan halfway through. The loaf is done when a toothpick inserted in the center comes out clean or with just a few moist crumbs attached. Internal temperature should read about 200°F.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing.

Notes

Banana ripeness matters: The darker the skins, the more intense the flavor. Yellow-peeled bananas work fine; brown-spotted or nearly black ones are ideal.
Storage: Keep at room temperature in an airtight container for up to 3 days. Wrap tightly and freeze for up to 2 months — thaw slices on the counter or toast from frozen.
Substitutions: Swap half the flour for whole wheat, use maple syrup instead of sugar (reduce liquid slightly), or add a handful of walnuts or pecans before baking.
