Italian Vegetable Stew

I made this stew for the first time when I was trying to use up a bunch of tomatoes from my garden that were past their prime — they'd gone soft but still had plenty of flavor. The trick is letting them break down completely in the pot, which releases enough liquid to cook everything else without needing much added stock.

Ingredients
  

For the stew
  • 2 tbsp extra-virgin olive oil
  • 1 medium yellow onion diced (about 1 cup)
  • 4 cloves garlic minced
  • 3 large carrots peeled and cut into half-moons (about 1¼ cups)
  • 2 stalks celery sliced (about ¾ cup)
  • 1 red bell pepper diced red bell pepper, diced
  • 1 zucchini diced zucchini, diced
  • ½ eggplant diced (about 1½ cups) eggplant, diced (about 1½ cups)
  • 3 medium tomatoes about 1 lb, chopped tomatoes (about 1 lb), chopped
  • 1 28 oz can crushed tomatoes crushed tomatoes
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • ½ tsp fennel seeds
  • Salt and freshly ground black pepper
To finish
  • ¼ cup fresh basil torn
  • ¼ cup grated Parmesan cheese
  • 2 tbsp extra-virgin olive oil for drizzling

Method
 

  1. Sauté the aromatics. Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion and cook for about 4 minutes, until softened and translucent. Stir in the garlic and cook for another minute until fragrant but not browned.
  2. Build the base. Add the carrots, celery, and red bell pepper. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften slightly at the edges.
  3. Add tomatoes and seasonings. Stir in the chopped fresh tomatoes, crushed tomatoes, vegetable broth, oregano, fennel seeds, and a good pinch of salt (about 1 tsp). Bring everything to a gentle simmer.
  4. Cook until tender. Reduce heat to medium-low and let the stew bubble gently for about 20 minutes. The vegetables should be tender when poked with a fork but not mushy.
  5. Add the softer vegetables. Stir in the zucchini and eggplant. Cook for another 10-15 minutes, until these are also tender and beginning to break down slightly. If you prefer your veggies more intact, add them at step 4 so they cook longer.
  6. Season and finish. Taste and adjust salt as needed — tomatoes can vary in sweetness, so taste before adding more. Remove from heat and stir in the fresh basil. Ladle into bowls and top with Parmesan and a drizzle of olive oil.

Notes

I keep this on rotation because it's forgiving and feeds four people easily. I often serve it with crusty bread for dipping, though you can also spoon it over cooked pasta or polenta if you want something heartier. A good olive oil drizzle right before serving makes a noticeable difference in the finish.
