- In a small saucepan, whisk together the cocoa powder and sugar until well combined. This step helps prevent clumps later on.
- Add a splash (about 2 tablespoons) of the milk to the cocoa-sugar mixture and stir vigorously until you have a smooth, thick paste with no dry bits.
- Pour in the remaining milk and add the pinch of salt. Place the saucepan over low-medium heat.
- Whisk frequently as the milk heats up. Do not let it boil; you want it to steam gently. This usually takes about 5–7 minutes.
- Once the milk is hot, reduce the heat to low and add the chopped chocolate. Continue whisking until the chocolate is completely melted and incorporated into the mixture, about 1–2 minutes.
- Remove from heat. Stir in vanilla extract if using. Pour immediately into mugs. Serve with whipped cream or marshmallows if desired.
