- Heat the olive oil or butter in a large skillet or Dutch oven over medium-high heat until shimmering. Add the sliced sausages and cook, stirring occasionally, until deeply browned on all sides — about 5 minutes. Remove with a slotted spoon and set aside; leave any fond (browned bits) at the bottom of the pan.
- Reduce heat to medium. Add the diced onion and cook until softened and translucent, about 4 minutes. Stir in the garlic and cook for 30 seconds more — don't let it brown or turn bitter.
- Pour in a splash (about ½ cup) of water and scrape up any fond from the bottom of the pan with a wooden spoon. This step is what gives your sauce depth without extra ingredients.
- Return the sausages to the pot, then add both cans of beans, ketchup, brown sugar, Dijon mustard, smoked paprika, garlic powder, salt, and pepper. Stir everything together until well combined.
- Bring to a gentle simmer over medium-low heat. Cook uncovered for 20 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have melded. The mixture should coat the back of a spoon — if it looks too dry, add another splash of water; if too thin, cook a few minutes longer.
- Taste and adjust seasoning with more salt or pepper as needed. Serve hot, garnished with fresh parsley if using. Pairs nicely with cornbread, coleslaw, or a simple green salad.
