Corn & Cheese Chowder — Fresh homemade recipe photo

Corn & Cheese Chowder

No ratings yet
I once overcooked corn in a chowder and ended up with something closer to mush than cream. Since then I've learned to hold back on the heat and fold it in at the end — that's really what separates a good bowl from one worth making again.
This recipe earns its place in my rotation because it delivers richness without feeling heavy, and the sweet corn balances the sharp cheese so well you don't have to think about sides. I make it when I want something that tastes like effort but comes together quickly — usually with whatever I've got on hand, from frozen kernels to a block of cheddar sitting in the fridge.
One thing I swear by: sautéing the corn off-heat after adding the cream so it keeps its bite. It's a small step that makes the whole dish feel more intentional.

Ingredients

The Base
  • 4 tbsp unsalted butter
  • 1 medium yellow onion finely diced (about 1½ cups)
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 3 cups heavy cream
  • 1 cup whole milk
  • 1 tsp kosher salt plus more to taste
  • ½ tsp freshly ground black pepper
The Corn & Cheese
  • 4 cups fresh corn kernels from about 6 ears, or frozen/canned if you prefer
  • 2 cups sharp cheddar cheese shredded (about 8 oz), divided
  • 1 cup smoked gouda shredded (about 4 oz)
To Serve
  • Chopped chives
  • Crusty bread or cornbread

Method

  1. Prep the corn. Cut kernels from cobs and set aside. If using fresh corn, leave them whole — you don't need to chop them further.
  2. Cook the aromatics. In a large pot (at least 6-quart), melt butter over medium heat. Add diced onion with a pinch of salt and cook until softened and translucent, about 5 minutes. Stir in garlic and cook for another minute until fragrant.
  3. Make the roux. Sprinkle flour evenly over the onions and stir constantly for 1 minute — you want it golden but not browned. This is what thickens your chowder.
  4. Add the dairy. Slowly pour in the heavy cream while whisking to prevent lumps, then add the milk. Bring just to a simmer (do not boil), stirring occasionally, until the mixture has slightly thickened, about 5 minutes.
  5. Cook the corn off-heat. Turn off the heat and stir in all of the corn kernels. This is the trick — cooking them gently without boiling preserves their sweet crunch. Let sit for 3–4 minutes so they warm through.
  6. Add the cheese. Remove pot from heat entirely, then fold in 1½ cups cheddar and ¾ cup gouda. Stir until melted and creamy. Taste and adjust salt — you want it slightly under-seasoned since it'll be rich.
  7. Finish and serve. Ladle into bowls, top with remaining cheese if desired, and garnish with chives. Serve immediately while hot.
  8. To store: Transfer to an airtight container and refrigerate for up to 4 days. Reheat gently on the stovetop over low heat, stirring frequently — avoid boiling or your cheese may separate.
