- Melt the chocolate: Place the semi-sweet chocolate chips in a heatproof bowl. Microwave in 30-second intervals, stirring well between each interval, until completely smooth and melted. Alternatively, use a double boiler. Let it cool slightly so it is warm but not hot (about 100°F/38°C).
- Make the base: Whisk the egg yolks into the warm chocolate mixture until fully incorporated. Stir in the vanilla extract and sea salt. Set aside to cool to room temperature while you whip the cream.
- Whip the cream: In a clean, dry bowl, beat the cold heavy cream using an electric mixer on medium-high speed. Stop beating as soon as you see soft peaks (the cream holds its shape loosely but droops when the beater is lifted). Do not over-whip into stiff butter.
- Fold in the cream: Gently fold one-third of the whipped cream into the chocolate mixture to lighten it. Then, carefully fold in the remaining cream until just combined. The mixture should look marbled but homogeneous.
- Whip the egg whites: In another clean, dry bowl, beat the room-temperature egg whites with a pinch of sugar (reserved from the total amount if desired, or add now) on medium speed until stiff, glossy peaks form. The beater should leave a distinct trail that holds its shape.
- Fold in the whites: Add one-quarter of the whipped egg whites to the chocolate mixture and stir vigorously to lighten the base. Then, gently fold in the remaining egg whites using a spatula. Cut down through the center and fold over the edges until no white streaks remain. Be gentle to preserve air.
- Serve or chill: Divide the mousse among serving glasses or ramekins. For immediate service, it is ready now but will be airy. For a firmer texture that holds its shape when scooped, cover and refrigerate for at least 2 hours.
