I stopped buying bagged arugula after realizing the pre-washed stuff always turned slimy before I could toss it in dressing. Since switching to loose leaves and giving them a rigorous spin-dry session, this salad has earned a permanent seat at my table. The peppery greens hold up beautifully against a sharp citrus vinaigrette, making it an ideal side that feels light but substantial.

Ingredients
  

For the Salad
  • 6 oz loose arugula about 4 large handfuls, tough stems removed
  • 1 large ruby red grapefruit segmented and membranes removed
  • ½ cup toasted walnuts or pecans roughly chopped
  • 2 oz crumbled goat cheese or feta
For the Citrus Vinaigrette
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp fresh grapefruit juice reserved from segmenting
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • Salt and freshly cracked black pepper to taste

Method
 

  1. Prepare the greens: Wash the arugula thoroughly in a bowl of cold water. Use a salad spinner to dry it completely; this is crucial for ensuring the dressing clings rather than pools at the bottom. If you don't have a spinner, pat the leaves dry with clean kitchen towels. Place the dried arugula in a large serving bowl.
  2. Segment the fruit: Using a sharp knife, cut off the top and bottom of the grapefruit. Stand it upright and slice down along the curve to remove the peel and pith, following the contours of the fruit. Hold the peeled grapefruit over a small bowl to catch the juice, then carefully slice between the membranes to release the segments into the bowl.
  3. Make the dressing: In a small jar or bowl, combine the reserved grapefruit juice, olive oil, honey, and Dijon mustard. Whisk vigorously or shake until emulsified and creamy. Season generously with salt and black pepper. Taste and adjust sweetness or acidity as needed.
  4. Assemble: Drizzle about half of the dressing over the arugula and toss gently to coat. Add the grapefruit segments, toasted nuts, and crumbled cheese. Toss again lightly. Add more dressing if desired, but remember that the fruit will release some juice into the bowl as it sits.
  5. Serve: Serve immediately for the best texture. If making ahead, keep the dressing separate and toss just before eating to prevent the arugula from wilting too much.

Notes

The trick is balancing the acidity of the grapefruit with a touch of honey and plenty of fresh cracked pepper. I usually serve this alongside grilled chicken or roasted salmon because the bright flavors cut through richer proteins without weighing anyone down. It comes together in under ten minutes, relying on technique rather than complex ingredients to deliver maximum flavor.
Make sure you save some of that grapefruit juice from the segments; it adds a necessary depth to the dressing that bottled citrus juice simply cannot replicate.
