Method
- Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with a removable bottom.
- In a medium bowl, mix the almond flour, sugar, and salt. Stir in the melted butter until the mixture resembles wet sand and holds together when pinched.
- Press the mixture firmly into the bottom and up the sides of the prepared tart pan. Use the bottom of a measuring cup to flatten the base evenly.
- Bake the crust for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let it cool completely while you make the filling. Lowering the oven temperature to 325°F (160°C) is helpful now.
- Place the chocolate chips in a heat-safe bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer (do not boil). Pour the hot cream over the chocolate chips and let sit for 2 minutes before whisking until smooth.
- Whisk the egg, egg yolk, and sugar together in a separate bowl until pale. Slowly stream in the chocolate mixture while whisking constantly. Stir in the dissolved espresso powder.
- Pour the filling into the cooled crust. Bake at 325°F for 18-20 minutes. The edges should be set, but the center should still have a slight jiggle.
- Let the tart cool on a wire rack for at least 30 minutes before removing it from the pan. It will continue to set as it cools completely.
- While the tart cools, make the hard sauce: Beat the softened butter in a stand mixer until creamy. Gradually add the powdered sugar, alternating with heavy cream and vanilla extract. Beat on high for 2-3 minutes until light and fluffy. Add salt at the end.
- Slice the cooled tart into wedges. Serve each slice with a small dollop of the hard sauce on top or on the side. The heat from the room-temperature sauce will slightly melt against the cool tart, creating a luscious caramel effect.

Notes
The hard sauce is the real star—it starts liquid but firms up as it cools, creating a rich caramel ribbon. I always whisk extra flour into the butter mixture first; it prevents those dreaded lumps that ruin the smooth texture everyone expects.
Substitutions: Dark chocolate (70% cocoa) can be used for a less sweet, more intense flavor. If you don’t have almond flour, you can use 3/4 cup all-purpose flour mixed with 1/2 cup finely chopped toasted almonds.
Storage: Store covered in the refrigerator for up to 3 days. Bring slices to room temperature for 15 minutes before serving with the hard sauce for best texture.
Hard Sauce Tip: If the butter is too soft, the sauce will be runny. If it’s too cold, it won’t mix smoothly. Aim for cool butter that yields slightly to pressure but doesn’t leave fingerprints.
