- Place the carrots and a splash of water (about 2 tablespoons) in a medium saucepan over medium-high heat. Cover and steam until tender-crisp, about 5–7 minutes. Check by piercing with a fork; they should offer slight resistance.
- Drain any remaining water from the pan. Return to low heat and add the butter, honey (if using), salt, and pepper. Stir constantly until the butter melts and coats the carrots evenly.
- Remove the pan from the heat immediately. Add the chopped mint and toss gently to combine. The residual heat will wilt the mint just enough to release its aroma without turning it dark or slimy. Taste and adjust seasoning before serving.
