When I first made this for a summer barbecue, the bacon got so crispy it shattered when I crumbled it over the corn. My husband kept going back to the bowl while pretending he was just "grabbing seconds." That's usually my sign that something has earned its keep in my kitchen.
I make this salsa every time I grill chicken or fish — the sweet, salty crunch from the candied bacon plays against the bright lime and heat from the jalapeño. The trick is to let the bacon rest for five minutes after it comes out of the oven. It stays crunchy longer that way instead of getting soggy from its own residual moisture.
I've been making this long enough now that I keep a jar of candied bacon in my pantry just for snacking, so when I need salsa fast, I can pull a handful and toss it with frozen corn and fresh lime juice. It comes together faster than I expected every time.

Ingredients
  

For the Candied Bacon
  • 8 strips thick-cut bacon about 12 oz
  • 3 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
For the Salsa
  • 3 cups cooked corn kernels fresh off the cob or frozen, thawed
  • 0.5 cup red onion finely diced
  • 2 jalapeños seeded and minced
  • 3 cloves garlic minced
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 tablespoons chopped cilantro
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Method
 

  1. Candied bacon: Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper or foil. Place bacon strips flat on the sheet and sprinkle evenly with brown sugar, smoked paprika, and cayenne. Bake for 20 minutes, flip, then bake another 15–20 minutes until edges curl and sugar caramelizes into cracks. The bacon should be dark amber and crisp throughout — not chewy. Remove and let rest on the sheet for 5 minutes before crumbling into bite-sized pieces.
  2. Prep the corn: If using fresh corn, cut kernels off about 4 ears of corn (or use 3 cups cooked frozen corn). If using frozen corn, thaw and pat dry with a paper towel so it doesn't water down the salsa.
  3. Combine: In a large bowl, mix corn, red onion, jalapeño, garlic, lime juice, olive oil, cilantro, salt, and black pepper until well combined. Let sit for 10 minutes to let flavors meld.
  4. Finish: Fold in crumbled candied bacon just before serving so it stays crunchy. Taste and adjust seasoning — you may want more lime for brightness or a pinch more salt to balance the sweetness from the bacon.
  5. Serve immediately with tortilla chips, alongside grilled chicken or fish, or spooned over tacos. If making ahead, keep candied bacon separate and add just before serving.

Notes

Tips: Swap thick-cut for regular bacon and reduce bake time to about 30 minutes total, though the crunch won't be quite as dramatic. Store leftover candied bacon in an airtight container at room temperature for up to 5 days — it stays crunchy if you add a silica gel packet or a couple grains of raw rice to absorb moisture.
