I found myself reaching for this soup on a rainy Thursday when I was too tired to chop vegetables into anything precise. The secret isn’t fancy technique; it’s letting the onions sweat slowly in olive oil until they melt, which builds a sweet foundation before you even touch the squash.

  • 2 tbsp olive oil
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 4 cups butternut squash peeled and cubed (about 1 lb)
  • 1 can crushed tomatoes 28 oz
  • 2 cups vegetable broth
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • Salt and black pepper to taste
  • 0.25 cup heavy cream or coconut milk optional
  • Fresh basil for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the diced onions and cook for 5-7 minutes until soft and translucent, stirring occasionally.
  2. Add minced garlic, smoked paprika, and thyme. Cook for another minute until fragrant.
  3. Pour in the crushed tomatoes, vegetable broth, and cubed butternut squash. Stir to combine.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the squash is fork-tender.
  5. Remove from heat. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer in batches to a standard blender.
  6. Stir in heavy cream or coconut milk if using. Season with salt and black pepper to taste.
  7. Ladle into bowls and garnish with fresh basil before serving.
