The maple glaze on the pecans is what makes this worth doing. The sugar caramelizes just enough to give a satisfying crackle when you bite in, but it doesn't burn if you watch it closely. Method
 

  1. Toast the pecans: Preheat oven to 350°F. Spread pecans in a single layer on a parchment-lined baking sheet. Toast for 8–10 minutes, watching closely around minute 7 — they'll go from fragrant to burnt quickly. Remove and let cool slightly while you make the glaze.
  2. Glaze the pecans: In a small saucepan over medium heat, combine maple syrup, brown sugar, cinnamon, and salt. Stir until the sugar dissolves (about 1 minute). Pour over the warm pecans and stir to coat evenly. Spread them out on parchment paper to set — they'll harden as they cool, about 5 minutes.
  3. Prep the bananas: Slice bananas into rounds. Toss lightly with vanilla extract so they don't brown too quickly if prepping ahead.
  4. Assemble the parfaits: In glasses or small bowls, layer ingredients: yogurt first, then banana slices, crumbled toasted pecans, and another spoonful of yogurt. Repeat until layers are built up to your liking — aim for 3-4 distinct layers per serving.
  5. Finish: Drizzle with a little honey over the top. Serve immediately for maximum crunch, or refrigerate up to 2 hours (the bananas will soften but won't turn watery).
