Method
- Preheat the oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with butter or oil.
- In a large bowl, gently toss the blackberries with the sugar until well coated. Let them sit for 5 minutes while you prep the topping — this draws out some of their juices so the filling won't be too watery.
- Add the cornstarch to the berries and stir in the lemon juice, lemon zest, vanilla extract, and salt. Set aside.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter using your fingertips or a pastry cutter until the mixture resembles coarse crumbs with some pea-sized pieces of butter visible (this is what creates flaky layers).
- Pour in the milk and stir just until the dough comes together — don't overmix it. It'll be thick and shaggy, which is exactly right.
- Spread half of the blackberry mixture into the prepared baking dish, then dollop spoonfuls of the cobbler topping over the berries. Scatter any remaining fruit on top, then sprinkle with the extra sugar for a nice crunch when it bakes.
- Bake for 45–50 minutes until the topping is golden brown and the filling is bubbling around the edges. If the top browns too quickly, tent loosely with foil halfway through.
- Let rest for at least 15 minutes before serving so the filling can set a bit — this prevents everything from sliding off your spoon when you dig in.

Notes
Make-ahead: You can toss the berries with sugar up to a day ahead and keep them in the fridge. The topping mixes quickly, so this really does work for an actual weeknight dinner without any waiting around.
Substitutions: Frozen blackberries work fine — just thaw them first and drain off excess liquid before adding the cornstarch. You can also use blueberries or a mix of berries if that's what you have on hand.
Storage: Leftovers keep in an airtight container in the fridge for up to 4 days. Reheat gently in the microwave or warm in a 350°F oven for about 15 minutes. It tastes great either way, though I always say it's best served slightly warm with a scoop of vanilla ice cream.
