Blackberry Cobbler #1 — Fresh homemade recipe photo

Blackberry Cobbler #1

No ratings yet
I started making this cobbler when I needed something to use up a half-pint of overripe blackberries my neighbor kept dropping on the doorstep. What began as an experiment became one of those dishes that shows up in my rotation whether or not berries are actually on sale.

Ingredients

For the blackberry filling:
  • 4 cup fresh or frozen blackberries about 16 oz
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoon cornstarch
  • 1 teaspoon vanilla extract
For the cobbler topping:
  • 1 1/3 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 6 tablespoon unsalted butter melted

Method

  1. Preheat your oven to 375°F (190°C).
  2. Make the filling: In a large bowl, toss together the blackberries and sugar. Let sit for 5 minutes while you work on the topping — the berries will start releasing their juices.
  3. Add the remaining ingredients: Stir in the lemon juice, cornstarch, and vanilla until well combined. The mixture should look glossy and slightly thickened from the berry juices. Pour into a 9x13 inch baking dish (I like to use an 8x8 for a thicker cobbler).
  4. Mix the topping: In a separate bowl, whisk together flour, baking powder, sugar, and salt. Stir in the milk until just combined — don't overmix; some small lumps are fine. Pour this into the blackberry mixture.
  5. Pour the butter on top: Drizzle the melted butter evenly over the batter. Don't stir it in — you want to create layers that will separate during baking, giving you a golden crust and tender bottom.
  6. Bake for 45-50 minutes, until the edges are bubbling vigorously and the top is golden brown with some cracks showing through. The center should jiggle slightly but not look wet when you shake the dish gently.
  7. Cool for at least 10 minutes before serving. This step makes a real difference — the filling thickens as it cools, and cutting into it too soon will make everything runny. Serve warm with whipped cream or just plain heavy cream if you prefer something lighter.

Notes

The best part is how forgiving it is — you can eyeball the fruit and still get a good result, and if you let the berry mixture cool for ten minutes before baking, your crust stays crisper. I usually serve it with just a spoonful of heavy cream rather than ice cream, which keeps it from feeling too heavy.
