I discovered beetroot chocolate cake by accident when I was out of cocoa powder one afternoon and reached for the roasted beets in my fridge instead. The first slice looked unassuming—darker than most cakes, with a faint earthy sweetness—but it disappeared fast enough that I started keeping beets on hand specifically to make this.
The real secret is roasting them whole until they're completely tender and caramelized at the edges. That step takes thirty minutes of hands-off time, but it concentrates their natural sugars so you can cut back on the brown sugar without losing depth. Once I started doing that instead of boiling or steaming, this cake earned its place in my rotation because it's reliably delicious whether I'm baking for myself or sending a tin to neighbors.
It keeps beautifully—actually better than most cakes after a day or two as the beet flavor mellows into something richer and more chocolate-forward. The texture stays moist without being dense, which is what always surprises people when they try it for the first time.

  • 1 large beet peeled and grated on the fine side of a box grater (about 3/4 cup when grated)
  • 2/3 cup neutral oil vegetable or light olive oil
  • 1/2 cup buttermilk
  • 3 large eggs room temperature
  • 2 teaspoons vanilla extract
Optional finishing touch
  • 1 tablespoon butter for greasing the pan
  • Flaky sea salt for sprinkling on top before serving

Method
 

  1. Prep the beet and oven: Preheat your oven to 350°F (175°C). Toss the whole peeled beet with a little oil, wrap in foil, and roast for about 45 minutes until you can easily pierce it with a fork. Let cool enough to handle, then grate it finely using a box grater or food processor.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cocoa powder, brown sugar, and granulated sugar until there are no large lumps of cocoa left.
  3. Combine wet ingredients: In a separate large bowl, beat the eggs lightly with a fork or whisk. Add the oil, buttermilk, vanilla extract, and grated beet. Whisk until everything is fully incorporated—the mixture will look slightly speckled from the beet.
  4. Bring it together: Pour the dry ingredients into the wet and fold with a spatula just until combined. Don't overmix; you'll still see streaks of flour and cocoa when you stop, which is exactly right. The batter should be thick but pourable.
  5. Bake: Pour the batter into a greased 9-inch round cake pan or an 8×8 square pan. Bake for 30-35 minutes in a round pan, or 25-30 minutes if using an 8×8. The cake is done when a toothpick inserted into the center comes out clean with just a few moist crumbs clinging to it (not wet batter).
  6. Cool and serve: Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely before slicing. Sprinkle flaky sea salt on top if you're serving it as is—this really elevates the flavor against the sweetness.
