- Roast the beets: Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil or place them in a covered baking dish. Roast for 45–60 minutes until tender when pierced with a fork. Let them cool slightly, then slip off the skins and chop into rough chunks. Discard the foil.
- Sauté aromatics: In a medium saucepan over medium heat, add the olive oil. Add the minced shallot and cook for 2–3 minutes until softened and translucent but not browned. Stir in the grated ginger, cumin, cinnamon, and red pepper flakes, cooking for just 30 seconds until fragrant.
- Combine ingredients: Add the chopped roasted beets, sugar, apple cider vinegar, and half of the kosher salt to the saucepan. Stir well to combine, scraping up any bits from the bottom of the pan. Bring the mixture to a gentle simmer.
- Simmer and thicken: Reduce heat to low and cook uncovered for 15–20 minutes. The mixture will release juices and thicken into a chunky, jam-like consistency. Stir occasionally to prevent sticking. If it looks too dry, add a tablespoon of water; if too wet, simmer a few minutes longer.
- Finish and adjust seasoning: Remove the pot from heat. Taste the chutney. Add the remaining salt and adjust sugar or vinegar as needed for your preference. The flavor should be sweet, tangy, and spicy, with distinct bites of ginger and beet. Let it cool completely before transferring to jars.
