The secret isn’t fancy equipment; it’s steeping the vanilla bean seeds in the warm cream for twenty minutes before churning, which infuses every bite with deep floral notes.

Method
 

  1. Make the Apple Compote: Melt butter in a medium saucepan over medium heat. Add diced apples, sugar, lemon juice, and cinnamon. Cook for 8–10 minutes, stirring occasionally, until apples are tender but still hold their shape. The mixture should be syrupy, not watery. Remove from heat and let cool completely to room temperature. Tip: For chunkier ice cream, mash lightly; for smoother swirls, blend briefly.
  2. Prepare the Base: In a large bowl or measuring cup with a spout, whisk together the heavy cream, whole milk, sugar, salt, and vanilla seeds (and pod if using). Whisk vigorously for about 1 minute until the sugar is mostly dissolved and the mixture looks slightly frothy.
  3. Chill: Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight. The base must be very cold before churning to ensure a creamy texture.
  4. Churn: Pour the chilled base into your ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes). It is ready when it resembles soft-serve consistency.
  5. Swirl in Apples: During the last minute of churning, pour in the cooled apple compote through the feed tube so it creates swirls throughout the ice cream. Do not overmix if you prefer distinct chunks; stop immediately after adding.
  6. Freeze: Transfer the ice cream to an airtight, freezer-safe container. Press a piece of parchment paper directly onto the surface of the ice cream to prevent ice crystals. Freeze for at least 4 hours or until firm.
